
Oatmeal in a different version. Intensely cinnamon-flavored! 🙂 Delicate, healthy, and filling. Perfect for the whole family, including children! Start your day with it, and I guarantee you’ll have lots of energy 🙂

Ingredients
- 2 tbsp chia seeds
- 6 tbsp water
- 1 tsp baking powder (gluten-free)
- 200ml plant-based milk (e.g., almond or rice)
- 200g gluten-free oats
- 1 handful of nuts (e.g., walnuts or pecans)
- 3 tbsp coconut oil (or butter / clarified butter (ghee))
- 2 sweet apples
- 1 tbsp ground cinnamon
- 1 cinnamon stick (optional)
- 2 tbsp coconut butter (optional)
- For serving: coconut cream, coconut/plain yogurt, optionally 1 – max. 2 tsp honey (per serving)
Preparation
- Flax egg: Grind the chia seeds in a grinder/blender. Pour water over them and let sit for 5-7 minutes.
- Chop the nuts into small pieces.
- Core the apples and cut them into pieces. You can slice a few thin apple slices and use them to decorate the oatmeal at the end 🙂
- In a bowl, mix the oats, nuts, ground cinnamon, and baking powder.
- In a blender, combine the prepared flax egg, plant-based milk, coconut oil, and coconut butter. Blend on high speed for about 1 minute.
- Pour the wet ingredients over the dry ones. Mix well.
- Preheat the oven to 200°C (convection, lower rack).
- Add the diced apples to the mixture and stir.
- Lightly grease a baking dish (I used an 18×18 cm dish, and it fit perfectly) with coconut oil and spread the mixture evenly.
- Place cinnamon sticks inside the mixture. Decorate with apple slices or almond flakes.
- Bake for about 30 minutes.
- Serve with coconut cream or coconut/plain yogurt. Optionally, drizzle with honey and sprinkle with toasted nuts.
