Chocolate buckwheat porridge with yogurt and toasted pecans (v, gf, lf)

Oatmeal in a different version. Strongly cinnamon-flavored! 🙂 Delicate, healthy, and filling. Perfect for the whole family, including children! Start your day with it, and I guarantee you’ll have plenty of energy 🙂

Ingredients

  • 2 tablespoons chia seeds
  • 6 tablespoons water
  • 1 teaspoon gluten-free baking powder
  • 200ml plant-based milk (e.g., almond or rice milk)
  • 200g gluten-free oats
  • 1 handful of nuts (e.g., walnuts or pecans)
  • 3 tablespoons coconut oil (or butter/ghee)
  • 2 sweet apples
  • 1 tablespoon ground cinnamon
  • 1 cinnamon stick (optional)
  • 2 tablespoons coconut butter (optional)
  • To serve: coconut cream, coconut/natural yogurt, optionally 1 – max. 2 teaspoons of honey (per serving)

Preparation

  1. Flax egg: Grind the chia seeds in a grinder/blender. Add water and let sit for 5-7 minutes.
  2. Chop the nuts into small pieces.
  3. Core the apples and cut them into pieces. You can slice a few thin apple slices to decorate the oatmeal at the end 🙂
  4. In a bowl, mix oats, nuts, ground cinnamon, and baking powder.
  5. In a blender, combine the prepared flax egg, plant-based milk, coconut oil, and coconut butter. Blend on high speed for about 1 minute.
  6. Pour the wet ingredients over the dry ingredients. Mix well.
  7. Preheat the oven to 200°C (fan setting, lower rack).
  8. Add the diced apples to the mixture and stir.
  9. Lightly grease a baking dish (I used an 18×18 cm dish, and it fit perfectly) with coconut oil and pour in the mixture.
  10. Place the cinnamon sticks into the mixture. Decorate with apple slices or almond flakes.
  11. Bake for about 30 minutes.
  12. Serve with coconut cream or coconut/natural yogurt. Optionally drizzle with honey and sprinkle with toasted nuts.
